Why this recipe works

Start apple wedges before the meat

Two meat servings with sauce without rice or potatoes. Use a dish about 20 × 14 cm that holds a shallow layer. A firm tart apple holds shape better than very soft fruit.

Air fryer pork with apple mustard cream

Air fryer pork with apple mustard cream. Soften apple and onion first, then add meat and cream in stages in a shallow heatproof dish.

Ingredients

2 servings

Method

  1. 1

    Prepare

Slice apple into narrow wedges and onion finely, place in dish with half the oil. Trim pork and cut medallions about 1.5 cm thick; keep chilled. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.

  2. 2

    Precook and drain

If required by the manufacturer, preheat for 3 minutes at 180 °C. Precook apple and onion about 8 minutes at 180 °C, stirring gently once. They should begin softening, not collapse.

  3. 3

    Cook

Coat meat with remaining oil, salt and pepper and add flat. Cook about 10 minutes at 180 °C, turning once. Add mixed cream and mustard and heat about another 5 minutes at 170 °C. Measure meat. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.

  4. 4

    Check and serve

Gently stir sauce and serve with apple and pork. Without flour it stays fairly fluid. Extend meat cooking if needed rather than relying on bubbling sauce.
