Recipe
Air fryer coconut banana mini cakes with yogurt and egg. Mash ripe banana and use small moulds to keep the moist batter shallow and evenly baked.
Grease moulds with 5 g oil total. Mash banana finely with fork. Mix flour, coconut and baking powder; do not reserve coconut as a thick loose topping. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Mix egg, sugar, yogurt, remaining 15 g oil and banana. Briefly mix in dry ingredients and divide between four moulds. Avoid prolonged beating.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Bake about 22 minutes at 160 °C. Test centres: banana keeps crumb moist, but no shiny raw batter should cling. Extend if needed and leave airflow gaps.
Cool at least 5 minutes and release carefully. Let fragile cakes firm longer in moulds. Serve without cream or chocolate glaze.
