Why this recipe works

Granola firms as it cools

Six small topping portions, not six complete breakfasts. A wide dish about 18 × 14 cm prevents oats falling through. Cooling for 20 minutes is included.

Ingredients

6 servings

Method

  1. 1

    Prepare

Roughly chop walnuts. Mix with oats and cinnamon in a bowl.

  2. 2

    Mix and season

Mix in maple syrup and oil until oats bind. Spread shallowly in a closed-bottom dish, not directly in the perforated basket. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 140 °C. Roast about 12 minutes at 140 °C, stirring thoroughly every 3 minutes. Remove when oats are golden; do not wait for dark nuts.

  4. 4

    Check and serve

Spread on a clean tray and cool completely for 20 minutes. Transfer to a clean airtight jar only when dry and cold.
