What matters
Wet cheese makes sealing harder. Dry it thoroughly before shaping.
Air fryer mozzarella meatballs: eight stuffed beef meatballs with a chilling stage. Seal them carefully and check the meat around the filling.
Why this recipe works
A small cheese centre is enough. Thin meat or an open seam lets mozzarella leak out. Eight meatballs make two meat portions; the 15-minute refrigerator rest is included in preparation.
Recipe
Air fryer mozzarella meatballs: eight stuffed beef meatballs with a chilling stage. Seal them carefully and check the meat around the filling.
Divide mozzarella into eight pieces and pat dry. Briefly mix beef, crumbs, egg, onion, mustard, salt and pepper; do not taste the raw mixture.
Flatten eight portions of meat, enclose one cheese piece in each and seal into balls. Cover and chill for 15 minutes. Brush the outside with oil.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook with space between them for about 18 minutes at 180 °C. Turn gently after 10 minutes. Use separate batches if the basket is crowded.
Measure the meat beside the cheese centre, not just the melted cheese. Serve four meatballs per portion; add any sides separately. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Kitchen know-how

Small even balls cook more reliably than a few large ones. Changing their number changes cooking needs.
