Air fryer chicken enchiladas with tomato sauce and Gouda. Precook and shred the chicken, then roll in soft wheat tortillas and bake.
Why this recipe works
Four small rolls make two servings. This is a simple wheat tortilla version, not traditional corn enchiladas. A shallow dish about 18 × 14 cm contains the sauce.
Recipe
Air fryer chicken enchiladas with tomato sauce and Gouda. Precook and shred the chicken, then roll in soft wheat tortillas and bake.
Cut chicken into 3 cm pieces and poach in gently simmering water for about 15 minutes until cooked through. Drain and shred with clean forks. Do not wash raw poultry. Clean hands and utensils after handling raw meat. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Soften onion in oil. Add passata, salt and spices and heat for about 3 minutes in total. Mix some sauce with chicken.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Soften tortillas as the pack directs, fill and place seam down. Add remaining sauce and Gouda. Bake about 15 minutes at 170 °C. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Rolls must be hot in the centre. Extend if needed and serve two each with a wide spatula.
