Do not overfill
Too much Gouda pushes the seam open. A thin layer within the free meat edge can be better enclosed.
Bread two stuffed chicken escalopes and cook them in a single layer. The cheese filling remains within the meat edge, so that as little cheese as possible leaks out when turning.
Why this recipe works
150 g chicken breast are opened horizontally and pounded between two layers of foil to about 5 mm. Ham and cheese should be significantly smaller than the meat surface. For two pieces the basket needs enough space next to each other. The quantities cover the stuffed escalopes without side dishes; the nutrition estimate includes all the prepared breadcrumb coating.
Recipe
Thinly pounded chicken encloses cooked ham and Gouda. An oiled breadcrumb coating browns without a frying bath.
Cut fillets horizontally deep without dividing them completely, and open. Knock evenly thinly between two layers of film; then discard the film. Don't wash meat. Clean hands and tools after raw meat contact.
Salt and pepper. Place ham and cheese on one half each, leave around about 1.5 cm edge and fold. If necessary, secure with a suitable metal roulade needle. Turn one after the other into flour, egg and crumbs; slightly press on crumbs and wet with oil on the outside.
If provided, preheat for 3 minutes to 180 °C. Place both pieces in the basket with space between them and cook for about 22 minutes at 180 °C, gently turn after 12 minutes. Cook separately with a smaller basket and schedule additional time.
At the thickest point of meat, ensure at least 70 °C for 2 minutes; not only measure in melted cheese. Continue cooking if necessary. Remove all needles and cut them on a clean board.
Kitchen know-how
Too much Gouda pushes the seam open. A thin layer within the free meat edge can be better enclosed.
Dry crumbs often remain pale in the airflow. Distribute the weighed oil thinly instead of pouring out uncontrollably during cooking.
