What matters
Too much sauce softens the coating. Leave the edges clear and use the specified amount of tomato.
Air fryer chicken Parmesan with a thin coating, tomato and mozzarella. Add the cheese near the end and check the chicken centre separately.
Why this recipe works
Cook two thin chicken escalopes without sauce first. This keeps the Parmesan-coated edges dry while tomato and mozzarella heat only at the end. Pasta and additional side dishes are not included.
Recipe
Air fryer chicken Parmesan with a thin coating, tomato and mozzarella. Add the cheese near the end and check the chicken centre separately.
Cut the meat into two flat escalopes about 1 cm thick. Pat dry, season with salt and pepper, and drain the mozzarella well. Do not wash raw poultry. Clean hands and utensils after handling raw meat.
Mix breadcrumbs with Parmesan. Coat the chicken in flour, egg and then crumbs. Press the coating gently and brush the outside lightly with oil.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook the escalopes with space between them for about 18 minutes at 180 °C, turning after 10 minutes. Use separate batches in a smaller basket and allow more time.
Spread tomato over the centres and add mozzarella. Melt for about 5 minutes at 180 °C. Measure in the thickest chicken, not just in the hot cheese. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
