What matters
Do not beat for long after adding flour. Excess mixing can make this small cake tough.
Small air fryer lemon yogurt cake with oil. Use a suitable loaf tin, bake at moderate heat and test the centre before cooling.
Why this recipe works
A metal loaf tin about 16 × 8 × 6 cm suits the batter. This cake has no icing. Preparation includes 15 minutes of work and 20 minutes of cooling; it makes four small cake portions.
Recipe
Small air fryer lemon yogurt cake with oil. Use a suitable loaf tin, bake at moderate heat and test the centre before cooling.
Grease the tin with 5 g oil. Mix egg and sugar, then add yogurt, remaining 35 g oil, lemon juice and zest. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Mix flour and baking powder and stir in briefly. Fill the tin no more than two thirds full. Do not taste raw egg and flour batter.
If required by the manufacturer, preheat for 3 minutes at 150 °C. Bake for about 32 minutes at 150 °C. Test with a wooden skewer from 28 minutes. Extend if wet raw batter remains; lower the heat if the top darkens.
The centre must be baked through; a thermometer can confirm about 95 to 97 °C at the core. Cool for about 20 minutes, release and cut into four small pieces.
Kitchen know-how
Do not beat for long after adding flour. Excess mixing can make this small cake tough.
A larger tin gives a shallower cake and needs different checking. Do not change the tin size arbitrarily.
