Why this recipe works
In the air fryer Kaiserschmarrn is different from in the pan: the dough is baked like a thick pancake and only torn afterwards. A metal shape of about 18 cm distributes the heat faster than thick ceramic. It must leave room for the airflow all around and fit safely under the heating element.
Recipe
Kaiserschmarrn cooks in air fryer in a small metal shape, is then split and caramelized with butter and sugar.
Cut the eggs. Beat the protein stiffly with salt and let 15 g of sugar pour slowly.
Stir egg yolks, milk, flour and vanilla sugar smoothly. Gently add beaten egg whites in two portions, lastly add raisins.
Oil a flat metal shape of about 18 cm with 10 g butter. Fill the dough up to 2.5 cm.
Preheat air fryer to 170 °C. Use baking pan and bake for 9 to 11 minutes until the middle is hardened and the surface is golden brown.
Gently remove the baking pan. Sprinkle with two heat-resistant pan turners into bite-sized pieces and distribute the remaining butter and sugar.
Cook for 3 to 4 minutes at 180 °C and turn once. Sprinkle with powdered sugar and serve with compote.
