Why this recipe works
Brussels sprouts develop nutty roasted aromas in dry heat and loses part of its typical cabbage note. Large roes are quartered, small halved. Thus, the solid centre is even before loose outer leaves become black.
Recipe
Half Brussels sprouts will be dark golden outside in the air fryer and delicate inside before balsamic acid, maple syrup and walnuts provide a sweet and sour finish.
Cut off the drunken, remove the wilted leaves and wash the roses. Halve small roses, dry very large quarters and thoroughly.
Mix Brussels sprouts with olive oil, salt, pepper and garlic powder. Loose leaves may be added to the basket, but they will be crispy earlier.
Preheat air fryer to 190 °C. Place Brussels sprouts with the cutting surfaces down and cook for 7 minutes.
Shake basket and cook for another 5 minutes. Then check every 2 minutes until the seeds are soft and the outer leaves are dark gold.
Mix balsamic and maple syrup in a serving bowl. Chop walnuts coarsely.
Mix hot Brussels sprouts immediately in the bowl with the glaze, walnuts and lemon peel. Do not cook again at high heat.
