Why this recipe works
Eight wedges make four small snack servings. Weight refers to flesh without skin and stone. Warm avocado is softer than cold and does not become crisp like chips inside.
Recipe
Air fryer breaded avocado wedges with lemon and a breadcrumb crust. Use ripe but firm fruit so the wedges can be sliced and turned without breaking.
Halve avocado, remove stone and peel. Cut flesh into eight thick wedges and gently coat with lemon juice.
Mix flour with salt. Coat wedges in flour, egg then crumbs. Support with a broad spoon rather than squeezing. Brush coating lightly with oil.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake two batches of four wedges about 8 minutes each at 180 °C. Turn very carefully halfway. Egg coating must cook fully even at soft contact points. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Lift out with a spatula and serve promptly. Centres stay creamy; do not wait for firm potato texture and burn the crust.
