Bake in a shallow dish
A high layer of fruit heats up more slowly, while the crumble topping can become dark. The described shallow dish facilitates the cooking.
The small crumble is baked in a shallow dish so that the fruits become hot and the crumble topping do not burn before. Cream or ice cream are not part of the basic recipe.
Why this recipe works
A dish measuring about 18 by 14 cm with at least 4 cm edge height offers space for the small quantity. The crumble topping is loosely distributed so that steam can escape from the fruit layer. Fresh, non-frozen blueberries are used. The amount is four small dessert portions. Ten minutes of cooling belong to the total time, since the berry juice is very hot directly from the device.
Recipe
Bake fresh blueberries beneath a loose butter and oat crumble topping. A little starch binds the leaking juice before the dessert is left to cool briefly.
Mix blueberries with 10 g sugar, corn starch and lemon juice carefully. Distribute in a suitable flat heat-resistant form. Do not crush the fruit into a purée.
Rub the flour, oatmeal, remaining 25 g sugar and cold butter with your fingers to spread loosely. Spread evenly on the berries, but do not press to a solid layer of dough. Do not taste raw flour dough.
Preheat for 3 minutes to 170 °C if necessary. Put the mould safely in the basket, leave room for the airflow around and bake for about 22 minutes at 170 °C. The juice should also be bubbling towards the middle and the crumble topping should be baked through. Keep baking a little lower in the case of early browning.
Remove with oven gloves and let cool for about 10 minutes. Then divide into four small dessert portions. The fruits remain juicy; a slice of cake is not the target.
