What matters
Rub cold butter briefly to form separate crumbs rather than a smooth sheet of dough.
Air fryer apricot crumble with butter crumbs and oats. Weigh fresh fruit after stoning and bake in a shallow dish until tender beneath a golden topping.
Why this recipe works
Two dessert servings fit a shallow dish about 18 × 14 cm. Ripe but sliceable apricots work better than very hard fruit. The butter amount includes greasing the dish.
Recipe
Air fryer apricot crumble with butter crumbs and oats. Weigh fresh fruit after stoning and bake in a shallow dish until tender beneath a golden topping.
Grease dish with 5 g of the butter. Stone, weigh and quarter apricots. Mix with 10 g sugar and spread shallowly in dish. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Rub flour, oats, remaining 20 g sugar and 30 g cold butter into coarse crumbs with fingertips. Scatter loosely over fruit without pressing down.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake about 18 minutes at 170 °C. Apricots should yield easily to a knife and crumbs be baked beneath the surface too. Extend if needed without darkening them.
Cool about 5 minutes: fruit juices are very hot. Divide between two bowls and serve without extra cream or ice cream.
