Use very ripe banana
Yellow bananas with brown dots can be more easily crushed and give more sweetness. Very hard green fruits do not match this mixing ratio.
These oat cookies do not contain any additional sugar or egg. Its consistency remains soft and compact instead of crispy as with classic butter biscuits.
Why this recipe works
The sweetness comes from the ripe banana. The pulp is weighed because individual bananas are very different in size. Eight small biscuits are baked in two batches with four pieces each. The given portion number means four snack portions with two biscuits each, not four breakfasts. A suitable coated, fine-mesh or smooth application prevents soft mass from falling due to large gaps in the rack.
Recipe
Ripe banana binds oatmeal and chopped almonds to soft little biscuits. They are formed flat and cooled briefly after baking.
Finely crush banana and mix with oatmeal, chopped almonds and cinnamon. Leave for about 5 minutes so that the flakes absorb some moisture. The mixture remains moist, but should be deposited as a small mound.
Divide eight pieces of the same size and form into about 1 cm thick small slices. Squeeze the edges. Use a suitable insert with a part of the oil very thinly grease; do not use loose paper as a replacement.
Preheat for 3 minutes to 170 °C if necessary. Bake four biscuits at 170 °C for about 12 minutes, gently turn after 8 minutes. Use the rest of the oil on the second pass and bake the remaining four pieces for 12 minutes. If the centre is still wet, continue baking.
Allow to cool cookies on a wire rack for about 10 minutes. They become more stable, but remain soft. Two pieces each make a snack portion. The total time contains this cooling phase.

Without butter-sugar dough, no crumbly cookie texture is created. The expected consistency is rather soft and oat-like.
