Weigh the peeled banana
Two or three bananas can produce very different quantities. The decisive factor is 250 g peeled flesh.
Ripe bananas give this little banana bread sweetness and moisture. A compact metal loaf tin fits into a larger air fryer, if there is enough air around it.
Why this recipe works
A loaf tin of about 18 by 8 cm, about 6 cm high, is used. It may not be filled to more than two thirds and must fit safely into the device. A very deep dough takes longer, even if the surface is brown. The total time includes twenty minutes of cooling; the six slices are small portions of cake, not six full breakfasts.
Recipe
A small banana cake from the box is baked over moderate heat and cooled before cutting.
Spread out a matching metal loaf tin with 5 g oil. Finely crush bananas with a fork. Use the tin only if it is approved by the appliance manufacturer and the hot air can circulate next to it.
Mix the egg, sugar, 30 g of oil and milk with the mashed banana. Mix the flour, baking powder, cinnamon and salt separately and add only briefly. Pour into the tin, a maximum of two thirds high. Do not taste raw dough.
Preheat for 3 minutes to 150 °C if necessary. Place the tin in the basket and bake for about 40 minutes at 150 °C. Check with a wooden stick from minute 35. Continue baking if the dough is still wet and raw; if the surface is becoming dark, reduce the temperature to 140 °C instead of covering loosely.
The centre must be baked through; a thermometer can confirm approximately 95 to 97 °C in the core. Remove the cake, allow to cool for about 20 minutes and gently release from the mould. Cut into six slices. The cooling phase is included in the preparation time.
Kitchen know-how

Hot banana bread can seem gummy and disintegrates more easily. The planned cooling phase stabilizes the crumb.
