Swede, red lentils and spinach simmer in a spiced tomato and coconut sauce to make a filling vegetarian autumn curry.
Cut Swede into even cubes of about 1.5 cm edge length. Rinse lentils in a sieve until the water remains clear.
Heat oil in a large pot. Sweat for 4 minutes, add garlic, ginger, curry powder and cumin and roast for 1 minute.
Stir in cubes, tomatoes, coconut milk, broth and salt. Boil and cover gently for 10 minutes.
Add red lentils and simmer the curry open for another 15 to 18 minutes. Stir regularly and add some water if needed.
Add the spinach portions and let them fall together. Stir in lime juice and season with salt.
