Sauté the onion, carrots, celery and garlic in olive oil.
Add beans, tomatoes, bay leaf and water or stock. Simmer gently for 75 to 90 minutes.
When the beans are soft, mash a portion lightly or continue to simmer openly until the soup is creamy.
Serve with salt, pepper, olive oil, parsley and a little lemon.
