Why this recipe works

Recipe
Chickpeas from the can become a spicy snack in the air fryer when they are thoroughly dried and salted until they are roasted.
Rinse chickpeas thoroughly in a sieve and drain for several minutes.
Put on a clean kitchen towel, roll dry and remove loose skins as desired.
Mix chickpeas with olive oil, peppers, cumin, garlic powder and cayenne. Keep salt.
Preheat air fryer to 190 °C. Roast chickpeas for 10 minutes and shake every 4 to 5 minutes.
Toast for another 4 to 7 minutes and check every 2 minutes. Chickpeas should be dry and crispy, but not hard.
Put in a bowl, mix immediately with salt and lemon peel and let cool for 5 minutes before eating.
