What matters
Do not shake fillets roughly; they break easily.
Air fryer trout with almonds: gently cook the fish first and add almond butter later. Check doneness at the thickest part before serving.
Why this recipe works
Use raw skin-on fillets, not smoked trout. This makes two fish portions without sides. Thin fillets may finish sooner than thick middle sections.

Check fillets for bones and pat dry. Oil skin side and season flesh with salt and pepper.
Mix butter with almonds. Place fillets skin down without overlap in a suitable shallow dish.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Cook initially about 8 minutes at 170 °C. Check thin ends early and swap positions if needed. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Add almond butter and cook about 5 minutes at 170 °C. Do not let almonds darken. Add lemon juice on the plate. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
