Do not leave sardines at room temperature before preparation.
Air fryer sardine fillets with garlic and parsley. Use fresh deboned fish, pat dry and cook skin side down in two loose batches.
Why this recipe works
Two fish servings without bread or salad. Weigh edible raw fillets, not whole fish with heads and backbones. Canned sardines are not equivalent.
Recipe
Air fryer sardine fillets with garlic and parsley. Use fresh deboned fish, pat dry and cook skin side down in two loose batches.
Check fillets for bones, pat dry and keep chilled until cooking. Mix oil with garlic, salt and pepper.
Oil fillets thinly. Use a suitable shallow tray if small fillets could fall through the rack. Place skin down without overlapping. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook two batches about 8 minutes each at 180 °C. Check thin ends early. Thickest fillet centres must be cooked through too; extend if needed. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Lift with a wide spatula. Add parsley and lemon on the plate. Watch for fine remaining bones while eating.
