What matters
Small loose onion layers brown faster than whole wedges; check early.
Air fryer red onions with balsamic vinegar and honey. Roast wedges in oil first, then add the sweet and sour glaze near the end to limit burning.
Why this recipe works
Two vegetable sides from peeled red onions. Use ordinary balsamic vinegar, not thick sweet balsamic cream. Glaze should coat wedges rather than burn onto the dish.
Recipe
Air fryer red onions with balsamic vinegar and honey. Roast wedges in oil first, then add the sweet and sour glaze near the end to limit burning.
Cut onions lengthways into wedges about 2 cm wide. Leave just enough base to hold layers together. Toss with oil, salt, thyme and pepper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Roast loosely in a shallow dish about 15 minutes at 170 °C. Turn gently halfway. Mix balsamic vinegar and honey separately. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Pour glaze over nearly tender onions and finish about 5 minutes at 170 °C. Mix gently once and watch dark edges.
Thick bases should be tender. Serve with sauce and remove tough base remnants. Lower temperature if honey darkens strongly.
