Why this recipe works
Two small sides from artichoke hearts in brine, not oil marinade. Parmesan normally uses animal rennet, so the base recipe is not automatically classified as vegetarian.
Recipe
Air fryer artichoke hearts with Parmesan and breadcrumbs. Use cooked hearts in brine, drain and dry well before baking with a thin crust.
Drain artichokes thoroughly and pat dry. Halve large hearts into similar thicknesses and remove any tough leaves.
Toss with oil, garlic and pepper in a shallow dish. Mix Parmesan and crumbs and spread thinly over cut faces. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake about 12 minutes at 180 °C. Hearts should be hot through and topping only golden. Check earlier if browning strongly.
Add lemon juice after baking. Lift out with a spoon and serve as a side or small starter.
