Air fryer tomato focaccia made from a soft yeast dough. Allow two rises, dimple with oiled fingers and bake in a small suitable tin.
Why this recipe works
Four bread sides from a tin about 18 × 14 cm. Preparation includes 60 minutes first rise, 20 minutes second rise and five minutes cooling. Cool kitchens may need longer rising.
Recipe
Air fryer tomato focaccia made from a soft yeast dough. Allow two rises, dimple with oiled fingers and bake in a small suitable tin.
Mix flour, yeast and salt. Add lukewarm water and 8 g oil, knead about 8 minutes. Cover and rise about 60 minutes until noticeably airy.
Grease tin with 5 g oil. Press dough in and rise again about 20 minutes. Dimple with remaining 2 g oil on fingers. Chop and dry tomatoes and press in lightly with oregano. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake about 25 minutes at 170 °C. Dough must be baked beneath tomatoes too. Extend if needed without darkening the top.
Cool about 5 minutes and lift from tin. Cut crumb should be airy and set, not sticky raw dough. Divide into four.
