Do not heat the sauce in an empty basket
The small amount of sauce belongs in the pot and then on the meat. In the basket floor, it would run off and burn quickly.
This everyday Teriyaki variant combines soy sauce, honey, ginger and rice vinegar. The glaze is boiled separately and added to chicken that is almost cooked.
Why this recipe works
Honey can quickly become dark in direct hot air. Therefore, the meat cubes are first cooked only with oil and then briefly glazed. The sauce does not touch raw meat before boiling. Two meat portions without rice are included. The Japanese-inspired seasoning is a simplified kitchen version without Mirin or Sake.
Recipe
Chicken cubes cook first without sugar. A separately boiled soy honey glaze is only added in the last minutes.
Do not wash chicken, but pat dry and cut into cubes of about 2.5 cm. Mix with the rapeseed oil. Do not use extra salt, as the glaze already contains soy sauce.
Boil soy sauce, honey, rice vinegar, water, ginger and garlic in a small pot and simmer gently for about 2 minutes. Put it aside. Use clean utensils without raw meat contact.
Preheat for 3 minutes to 180 °C if necessary. Cook meat loosely in a single layer for about 11 minutes at 180 °C, turn after 6 minutes. Mix with half of the sauce and cook for another 2 minutes. The glaze may shine, not turn black.
The thickest cubes in the core must reach at least 70 °C for 2 minutes; if necessary, extend the time at a lower temperature. Mix the rest of the already cooked sauce with clean utensils under the finished meat. Spread over two portions.

The small amount of sauce belongs in the pot and then on the meat. In the basket floor, it would run off and burn quickly.
Large pieces take longer and small pieces tend to dry out. A comparable size facilitates temperature control.
