What matters
Even thin cutlets matter more than a very dark ham crust.
Air fryer saltimbocca-style chicken with thin cured ham and sage. Flat cutlets cook without stuffing and get a little lemon butter at the end.
Why this recipe works
Four flat pieces make two meat servings without sides. This everyday adaptation uses chicken instead of veal and dried sage. Lay ham on top rather than wrapping a thick meat roll.
Recipe
Air fryer saltimbocca-style chicken with thin cured ham and sage. Flat cutlets cook without stuffing and get a little lemon butter at the end.
Cut chicken into four flat cutlets and pound between film to about 7 mm. Discard film. Season with pepper and a light sprinkling of the measured sage. Do not wash raw poultry. Clean hands and utensils after handling raw meat.
Brush thinly with oil and press a suitable thin ham slice onto each piece. Do not leave ham edges hanging loose. Add no unsecured sage leaves or wooden skewers.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook ham-side up with gaps for about 12 minutes at 180 °C. Do not stack; allow extra batches for a small basket. Measure inside chicken, not just the hot ham surface. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Soften butter in a warm bowl and mix with lemon juice. Spoon over cooked chicken. Taste before adding any salt, as cured ham is already salty.
