What matters
Sand often sits between leek layers. Wash the split stalk, not just the outside.
Air fryer beef and leek strudel in crisp puff pastry. Cook the filling in a pan first and let it cool before enclosing it in the dough.
Why this recipe works
One small strudel no longer than 20 cm makes two servings. Preparation includes 10 minutes cooling the filling. Check that the dish and strudel fit with air space around them.
Recipe
Air fryer beef and leek strudel in crisp puff pastry. Cook the filling in a pan first and let it cool before enclosing it in the dough.
Split leek, wash thoroughly and slice finely. Heat oil in a pan and fry mince into cooked crumbs for about 7 minutes. Add leek and soften about 5 minutes, stirring. Leave no pool of liquid.
Stir in cream cheese, salt and pepper and cool spread out about 10 minutes. Lay pastry about 20 × 25 cm, fill centrally and leave a border. Fold ends, seal and place seam down in the dish. Brush with milk and slit the top. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake about 22 minutes at 170 °C. Check pastry at sides and base as well; it should be dry and cooked through. If only the top is browned, continue at a lower temperature. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Lift with a broad spatula and slice. Filling is hot and soft; support the base when cutting. Serve as filled pastry without extra sauce.
