Air fryer sweetcorn cakes with cheese, egg and spring onion. The soft batter bakes in shallow stable moulds in separate batches until set.
Why this recipe works
Eight small cakes make four snack servings. Weigh corn after draining. Timing includes two batches of four shallow moulds; do not fill like tall muffins.
Recipe
Air fryer sweetcorn cakes with cheese, egg and spring onion. The soft batter bakes in shallow stable moulds in separate batches until set.
Drain corn thoroughly. Slice spring onion finely and grate Gouda. Lightly grease eight shallow stable moulds about 6 cm across with the oil. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Whisk egg and milk. Mix flour and baking powder and stir in briefly. Fold in corn, cheese, spring onion, salt and pepper. Fill evenly about 1.5 cm deep.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake two batches of four about 14 minutes each at 170 °C. Centres must be set without raw flour and egg batter; extend for thicker moulds. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Remove with gloves and release carefully. Corn kernels stay juicy inside, but the surrounding batter must be fully baked.
