What matters
Uneven slices create both collapsing and firm areas in the same dish.
Air fryer sweet potato gratin with milk, cream and Gouda. Thin slices, a shallow dish and a knife test help ensure tender layers.
Why this recipe works
This gratin makes two side portions. A dish about 18 × 14 cm keeps the layer below 4 cm. The vegetable’s natural sweetness needs no added sugar.
Recipe
Air fryer sweet potato gratin with milk, cream and Gouda. Thin slices, a shallow dish and a knife test help ensure tender layers.
Lightly oil the dish. Slice sweet potatoes evenly to 2 mm; a mandoline with a hand guard helps.
Mix milk, cream, garlic, salt and pepper. Layer slices loosely and pour the liquid evenly over them. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Cook about 25 minutes at 160 °C. Test down to the bottom layer with a small knife; if firm, continue without cheese.
Grate and scatter Gouda. Brown for about 6 minutes at 180 °C until all slices are tender. Take care lifting the hot dish.
