Air fryer spinach and feta mini quiches. Four small shortcrust shells with fully set filling, prepared in two planned baking batches.
Why this recipe works
Line four sturdy metal tartlet tins, about 8 cm across and 2 cm deep, with thin pastry. Bake two per batch. The ten-minute spinach cooling stage is included in preparation; the four portions are small snacks.
Recipe

Wilt spinach in the oil in a pan for about 3 minutes. Evaporate liquid, chop and cool for 10 minutes. Keep the pastry chilled until then.
Roll pastry thinly and line the four tins. Prick the bases with a fork. Mix eggs, cream, milk, salt and pepper; add spinach and crumbled feta. Do not fill to the brim. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake two tins with space between them for about 19 minutes at 170 °C. The egg filling must be fully set and the bases baked through; extend if needed. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Keep the remaining tins refrigerated, then bake for about 19 minutes too. Remove with oven gloves and release carefully from the tins. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
