Why this recipe works

Squeeze the spinach dry and keep the parcels flat

Wet spinach makes the dough bottom soft. The leaves are briefly wilted, squeezed dry and cooled before packing. Two about 2 cm thick salmon pieces fit better into the dough shell than very high fillets. Check the specified shape size and basket surface in advance: Both packages must be able to lie with space between them, otherwise the time will be extended by separate passes.

Recipe

Air fryer salmon in puff pastry

Two small puff pastry packets enclose salmon, cream cheese and well dried spinach. The underside has to bake as well as the surface.

Ingredients

2 servings

Method

  1. 1

    Prepare the spinach

Heat oil in a pan and let spinach collapse for about 3 minutes. Squeeze dry in a sieve, chop roughly and let cool for about 10 minutes. Then mix with cream cheese, salt and pepper.

  2. 2

    Wrap the salmon

Pat the fish dry and check for bones. Divide the dough into two rectangles, place one piece of salmon and half of the spinach cream on each. Fold the pastry around the fish, seal the edges firmly and place seam-side down. Packages should remain flat and cover the fish completely.

  3. 3

    Bake the pastry

Thinly brush the tops with egg and cut in two small steam slots each. Preheat for 3 minutes to 170 °C if necessary. Place in the basket with space between them and bake for about 22 minutes at 170 °C. Do not put in loose baking paper to preheat.

  4. 4

Check the pastry base and fish

The underside must not be raw or doughy. Ensure at least 70 °C for 2 minutes in the fish core; continue baking at a slightly lower temperature if necessary. The browning of the surface alone is not enough. Put it hot on two plates.

Tips for Air fryer salmon in puff pastry

Let the filling cool before wrapping

Heat makes the layers of fat soft before the package comes into the air fryer. The cooling phase is therefore explicitly planned.

Trim thick fillets into flatter pieces

A very high piece of salmon takes longer than the thin dough shell. The approximately 2 cm thick starting shape facilitates even cooking.

Variations

How to adapt this recipe

The filling is often too wet, the pastry is wrapped too tightly or the air flow is blocked under the package. Squeeze the spinach dry and do not cook on a closed paper floor.

Not for this procedure. The salmon must be thawed and dry; otherwise ice water and longer core heating will change the baking result.

For two small, flat fillets, yes, provided the dough surface has about 22 by 25 cm. Before filling, check that each piece can be completely wrapped.

No. Included are preparation and ten minutes spinach cooling, the short pan phase, possible preheating and the actual baking time.
