Why this recipe works

Roasted edges, creamy centres

Use fully cooked large lima beans, also called butter beans. This makes a warm snack or side, not a dry crunchy snack for long storage.

Ingredients

2 servings

Method

  1. 1

    Prepare

Rinse cooked beans, drain and gently dry very thoroughly. Split beans are edible but break more easily.

  2. 2

    Mix and season

Mix oil, paprika, salt and pepper and gently coat beans. Seasonings should adhere to the oil.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 180 °C. Roast loosely about 15 minutes at 180 °C, gently mixing after 5 and 10 minutes. Remove earlier if spices darken.

  4. 4

    Check and serve

Serve warm. Do not roast completely dry; the centres should stay soft.
