Check the aubergine is tender
At the end try a thicker eggplant piece or test with a fork. It should be soft and not firm and spongy.
The air fryer version of the French vegetable dish is cooked in coarse pieces, not layered as a fine slice spiral. The vegetables are stirred several times and are then added with basil.
Why this recipe works
For about 550 g vegetables a flat heat-resistant shape of about 18 by 14 cm with a sufficiently high edge is suitable. The vegetables should lie at most about 4 cm high and can still be stirred. The dish must leave room for the airflow in the basket all around. Two vegetable side dishes without bread or rice are included; the hot-air fryer replaces the simmering on the stove with several short cooking phases.
Recipe
Aubergine, pepper and onion get a head start. Add courgette and tomatoes to the same shallow dish later and cook into a juicy vegetable side.
Cut eggplant and zucchini into approximately 1.5 cm cubes, peppers into similarly large pieces and onion into small wedges. Dice tomatoes separately and pick up their juice. Provide a matching shallow dish.
Mix eggplant, pepper and onion with oil, salt and pepper in the dish. Preheat for 3 minutes to 180 °C if necessary. Put the mould in the basket and cook for about 10 minutes at 180 °C, stir in 5 minutes.
Add zucchini, garlic and tomatoes with juice. Mix everything and cook for about 15 minutes at 180 °C. Stir again after 8 minutes, so that dry pieces on top mix into the tomato juice.
Cook for another 5 minutes until the eggplant is particularly soft. In case of solid vegetables extend; spread flatter with too much free liquid and cook briefly. Add the basil and serve two side dishes.

Tomatoes deliver the liquid for cooking. Very dry fruits can make a small additional sip of water necessary.
