Air fryer radicchio with honey and walnuts. Roast small wedges first, then add nuts and honey near the end so they do not darken too quickly.
Why this recipe works
Two small vegetable sides. Radicchio stays bitter after roasting; honey balances it but does not turn it into a sweet salad. A little core holds leaves together during cooking.
Recipe
Air fryer radicchio with honey and walnuts. Roast small wedges first, then add nuts and honey near the end so they do not darken too quickly.
Cut a small radicchio into four wedges. Wash, dry thoroughly and leave a little firm core for support. Coat with oil, salt and pepper.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Roast wedges in a shallow dish about 8 minutes at 170 °C, turning gently once. Break walnuts coarsely and mix honey with lemon juice. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Add nuts and honey mixture to nearly tender wedges. Cook about another 3 minutes at 170 °C, watching leaf edges early.
Thick leaf bases should be tender, edges not black. Remove tough core remnants and serve with nuts and juices.
