Recipe
Air fryer beetroot walnut patties with oats and egg. Dry cooked beetroot without vinegar well and let the mixture rest before shaping flat patties.
Dry beetroot thoroughly and coarsely grate. Finely chop onion and walnuts so large pieces do not break out of the patties.
Mix with oats, egg, mustard, salt and pepper and rest about 15 minutes. Shape four patties about 1.5 cm thick. Brush thinly with oil and arrange on a suitable lightly greased insert, using only the measured oil.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Bake spaced apart about 20 minutes at 180 °C, turning gently halfway with a broad spatula. Red colour remains; check the densest centre rather than waiting for a brown colour change. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Let firm briefly and serve two patties each. They stay soft inside but should hold together. For a small basket, cook in sequence and allow extra time.
