Check the bread fits before topping
Short pieces can be placed in and lifted out more safely. Share the baguette appropriately, instead of pressing it on the hot basket walls.
Four small toasted pieces are made from already baked baguettes. Little tomato sauce and dry cheese prevent the bread from softening unnecessarily.
Why this recipe works
The recipe starts with ready-to-eat bread, not with a raw or frozen dough. A short baguette is divided crosswise and longitudinally into four pieces, which fit with the cut surface upwards into the basket. Two batches with two pieces each are planned. Two small pieces each form a snack or a small meal; salad and other side dishes are not included.
Recipe
Small baguette halves are coated thinly with tomato and baked with well-drained mozzarella. Fresh basil will only be added afterwards.
Baguette crosswise into two short pieces and divide these lengthwise into halves. Drain mozzarella thoroughly and dab dry. Mix the tomatoes with oil, garlic, salt and pepper.
Apply tomato mixture thinly on the four cutting surfaces. Tear mozzarella small and distribute evenly; avoid large aqueous heaps of cheese. Basil first withheld.
If provided, preheat for 3 minutes to 180 °C. Bake two baguette pieces with cut surface upwards for about 8 minutes at 180 °C. The cheese shall melt, and the individual golden places shall be given; the bread shall not turn black.
Keep the remaining two pieces cool until baking and bake for about 8 minutes. Complete all pieces with basil. Enjoy the first portion as soon as possible after its batch finishes.
Kitchen know-how
Short pieces can be placed in and lifted out more safely. Share the baguette appropriately, instead of pressing it on the hot basket walls.
Moisture from the cheese otherwise runs into the tomato layer and makes the bread center soft. The drained weight is the relevant quantity.
