What matters
Drying reduces surface water but does not remove okra’s natural thickening properties.
Air fryer okra with tomatoes, garlic and cumin. Roast dry whole pods first, then add the tomatoes and onion for a juicy vegetable side.
Why this recipe works
Two vegetable sides using fresh okra. Young small pods are more tender than large woody ones. A closed dish retains the tomato juices released later.
Recipe
Air fryer okra with tomatoes, garlic and cumin. Roast dry whole pods first, then add the tomatoes and onion for a juicy vegetable side.
Wash okra and dry thoroughly. Trim stems lightly without opening seed chambers. Dice tomatoes and slice onion very thinly.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Toss okra with 6 g oil and roast loosely in a shallow dish about 8 minutes at 180 °C. Turn carefully once. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Add tomatoes, onion, remaining 6 g oil, garlic, cumin, salt and pepper. Cook about 12 minutes at 170 °C, stirring gently once.
Check okra and onion are tender. Discard hard fibrous pods. Serve with tomato juices as a vegetable side.
