Air fryer leek mushroom quiche with shortcrust pastry and egg cream filling. Fry off vegetable moisture and briefly prebake the base before filling.
Why this recipe works

Recipe
Air fryer leek mushroom quiche with shortcrust pastry and egg cream filling. Fry off vegetable moisture and briefly prebake the base before filling.
Butter tin, line with pastry and form a low rim. Prick base and chill about 10 minutes. Wash and slice leek, dice mushrooms. Fry vegetables in oil about 8 minutes until no liquid pool remains.
If required by the manufacturer, preheat for 3 minutes at 170 °C. Prebake empty pastry about 7 minutes at 170 °C. Gently press small puffed areas down with a spoon. Add no loose paper or unsecured beans as weights. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Whisk egg, cream, salt and pepper and add grated Gouda. Spread vegetables on base and pour filling over. Bake about 23 minutes at 160 °C until centre is set and no longer liquid. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Remove with gloves and rest in tin about 10 minutes. Release edge carefully and portion. If filling beneath vegetables is still raw, bake longer before cooling.
Kitchen know-how
Filling should occupy vegetable gaps, not overflow the pastry rim.
Four small slices count as snacks or part of a meal, not four large mains.
