What matters
Thickness matters most. Two narrow potatoes cook more evenly than potatoes of very different sizes.
Air fryer Hasselback potatoes with fine fan cuts, butter and thyme. Includes a slicing guide and a tenderness check for the centre.
Why this recipe works
Use two similarly sized potatoes, about 200 g each. Cut closely spaced slices without cutting through the base. Wooden spoon handles are cutting guides only and must not go into the appliance. Larger potatoes take longer.

Wash and dry the potatoes. Place between two wooden spoon handles and cut every 2 to 3 mm, leaving the base joined.
Rub with oil, salt and pepper. Gently open the cuts slightly without breaking the potatoes apart.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook with space between them for about 35 minutes at 180 °C. Check after about 20 minutes that the fans are opening; do not shake vigorously.
Add butter and thyme to the potatoes. Cook for another 7 minutes. A knife should slide easily into the thickest centre; extend the time if needed.
