Watering removes superficial starch, carefully drying prevents steam. In the air fryer, the pins first cook through and then get colour at higher temperature.
Why this recipe works
Fresh air fryer fries need some preparation, but only a little oil. The decisive factor is even pins of about one centimeter in thickness and a not overcrowded basket. With a small device, the quantity in two portions is significantly better.
Recipe
Homemade fries from fresh potatoes are watered, thoroughly dried and cooked crispy with little oil in two temperature levels.
Peel or thoroughly wash potatoes and cut into about 1 cm thick, as even as possible.
Place potato batons in cold water, stir through and water for 30 minutes. Drain and rinse clean again.
Spread French fries on a clean dishcloth and rub dry very thoroughly. Moist batons become soft in the basket.
Mix potatoes first with starch, then work the oil evenly. Do not salt yet.
Preheat air fryer to 180 °C. Fill in fries and cook for 15 minutes, shake vigorously after 7 and 12 minutes.
Increase the temperature to 200 °C and cook for another 8 to 13 minutes. Shake every 3 to 4 minutes and remove finished, thin batons earlier if necessary.
Place the fries in a bowl immediately, season with salt and peppers and parsley as desired and serve directly.
