The almonds are not roasted loosely in the basket. A matching metal shape keeps the hot syrup securely together and facilitates stirring.
Why this recipe works
Sugar water never belongs directly in the perforated basket. For burnt almonds a flat, stable metal baking pan is used, which leaves air all around. The syrup is very hot and sticky; therefore, the baking pan is only moved with heat-resistant gloves and the almonds completely cool before trying.
Recipe
Burned almonds are produced in the air fryer in a heat-resistant baking pan, in which cinnamon sugar and water boil under regular stirring.
Place a large piece of baking paper on a heat-resistant surface. Spread a matching flat metal shape thinly inside with butter.
Mix the sugar, water, cinnamon, vanilla sugar and salt in the baking pan and add almonds.
Preheat the air fryer to 180 °C. Use the mould safely and cook the almonds for 6 minutes.
Open with heat-resistant gloves and stir almonds carefully. Cook for another 9 to 12 minutes and stir every 3 minutes.
As soon as water evaporates and the sugar sticks granularly to the almonds, remove the baking pan immediately. Do not wait for dark caramel.
Gently spread almonds on baking paper, separate with two forks and leave to cool for at least 20 minutes.
