What matters
The mixture stays slightly sticky. Use damp hands rather than adding arbitrary amounts of flour.
Air fryer almond cookies made with ground sweet almonds, egg white and sugar. Small flattened cookies bake more evenly in separate batches.
Why this recipe works
Makes twelve small cookies, counted as six servings. Use ground blanched sweet almonds, not defatted almond flour. Preparation includes 15 minutes of cooling; baking time covers two batches.
Recipe
Air fryer almond cookies made with ground sweet almonds, egg white and sugar. Small flattened cookies bake more evenly in separate batches.
Weigh egg white and beat in a grease-free bowl until foamy. Gradually add sugar and beat to soft peaks. Gently fold in almonds. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
With slightly damp hands form twelve small mounds of about 15 g each. Flatten to about 1 cm high on a suitable closed baking insert. Leave gaps and refrigerate the remainder until the next batch.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Bake six cookies at a time for about 12 minutes at 160 °C. Repeat for the second batch, checking colour early because the appliance is already hot. Cook until pale golden outside and no longer raw inside. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Let each batch firm up briefly on the insert. Carefully release and cool for about 15 minutes in total. Cookies that are soft while warm become firmer.
