Recipe
Air fryer coconut macaroons with weighed egg white, sugar and desiccated coconut. Bake small mounds on a suitable tray in two batches until cooked inside.
Weigh egg white precisely and beat in a grease-free bowl until foamy. Add sugar gradually and beat until glossy with soft peaks.
Gently fold in coconut and lemon juice. Shape twelve small equal mounds. Place six spaced apart on a suitable shallow air fryer tray; do not use loose paper scraps. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Bake two batches about 12 minutes each at 160 °C. Watch browning early. Egg white must cook fully in the centre; extend gently if needed. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Cool on the tray about 15 minutes, then release carefully. Put in a clean tin only when cool; do not seal airtight while warm.
