Choose short aubergines
The specified cooking time requires a small eggplant. Large, thick specimens require significantly more time and often do not fit lengthwise into the basket.
The eggplant halves cook first without cheese. Only when the pulp is soft, tomato passata and the two cheeses come to the cut surfaces.
Why this recipe works
If the cheese were lying on from the beginning, it would often be dark before the aubergine flesh is soft. The diamond-shaped incision helps the oil and the heat to get deeper into the halves. A small eggplant yields two light portions. It has to fit lengthwise into the basket; with a small device, choose a short specimen.
Recipe
The eggplants are cooked softly and then baked over with tomato, mozzarella and parmesan.
Cut eggplant lengthwise. Cut the flesh deep in a diamond pattern without cutting the skin. Sprinkle with oil and season with salt and pepper.
Preheat for 3 minutes to 180 °C if necessary. Use aubergines with the cut surface on top side by side and cook for about 18 minutes at 180 °C. A fork should glide easily into the flesh; if necessary, extend the cooking time before adding the topping.
Spread tomato passata over the soft cut surfaces. Tear mozzarella into small pieces, overlay and sprinkle with parmesan. Don't squeeze the halves when moving.
Cook for about 6 minutes at 180 °C until the cheese is melted and sometimes golden brown. Add the basil and serve half each. Bread or other side dishes are not included.
