Why this recipe works

A warm turkey and millet meal

Even small pieces make doneness easier to check. Millet rests while the pan cooks and is folded in at the end. This makes two main meals without extra sides.

Recipe

Turkey, carrot and millet pan

Turkey cubes and tender carrots with fluffy millet, parsley and lemon.

Ingredients

2 servings

Method

  1. 1

    Cook millet

Rinse millet with hot water. Boil with 300 ml water and 1 g salt. Cover and cook gently according to the packet about 15 minutes until tender, then rest off the heat about 5 minutes. Adjust time and water if needed.

  2. 2

    Brown turkey

Meanwhile dice carrots about 1 cm and chop onion. Pat meat dry and dice about 2 cm. Heat oil in a wide pan and brown meat about 4 minutes over medium-high heat, turning.

  3. 3

    Finish vegetables

Add onion and carrots and fry about 3 minutes. Add the remaining 100 ml water, remaining 2 g salt and pepper. Cover and cook gently about 10 to 12 minutes until carrots are tender. Check thickest meat centres with a thermometer: at least 70 °C for 2 minutes. Cook longer if needed.

  4. 4

    Combine

Fold in cooked millet and heat through. Add lemon and chopped parsley. Serve hot as two main meals; millet and pan cook in parallel.
