Why this recipe works

Recipe
Samosas are crispy pastry bags with spicy potato-pea filling, cumin, coriander, ginger and garam masala. The filling must cool before forming.
Rub flour, salt and oil, then work in water. Knead a firm dough and let rest for 30 minutes.
Brown onion, ginger, chilli and cumin. Add potatoes, peas, coriander, garam masala and amchur.
Mash the filling coarsely, season to taste and allow to cool completely.
Roll out the dough, cut it in half, shape into pockets, fill and carefully seal the edges with water.
Fry the samosas over a medium heat until golden brown or coated with oil and bake at 200 degrees until crispy.
