Why this recipe works
Pears should be ripe, but still firm. Cut them thin and cover the dough just before baking. Too much Crème fraîche or very juicy fruits make the crust soft. Heat baking tray or brick thoroughly and push the Flammkuchen directly onto the hot surface.
Recipe
Crisp Flammkuchen is topped with crème fraîche, thin pear slices, goat’s cheese, red onion and walnuts.
Knead flour, water, olive oil and salt for 5 minutes to a smooth dough. Cover and leave to rest at room temperature for 20 minutes.
Preheat the oven with turned sheet or brick to 250 °C top/bottom heat. Allow to heat up completely for at least 20 minutes.
Cut pears into very thin wedges. Provide onion rings, goat cheese, Walnuts and thyme.
dough Shalve and roll out very thinly on baking paper. Apply each thinly with Crème fraîche and fill with pear, Onion and cheese.
Bake the Flammkuchen for 10 to 12 minutes on the hot surface until the edge and underside are strongly browned.
Sprinkle with walnuts, thyme, little honey and black pepper and serve immediately.
