Why this recipe works

A warm kohlrabi and lentil stew

Even small cubes suit the short cooking time of peeled lentils. Full-fat coconut milk makes the broth creamy and finely chopped ginger seasons it. Serve the stew chunky. This makes three light vegan meals.

Recipe

Kohlrabi and red lentil coconut stew

Small kohlrabi cubes and red lentils in a mild coconut broth with ginger and lemon.

Ingredients

3 servings

Method

  1. 1

    Prepare

Dice kohlrabi into small cubes about 1 cm across. Finely chop onion and ginger. Rinse lentils in a sieve under running water and drain well. Stir coconut milk smooth.

  2. 2

    Soften the aromatics

Heat oil in a pot. Soften onion over medium heat about 3 minutes. Add ginger and cook about 1 minute without letting it darken.

  3. 3

    Cook until tender

Add kohlrabi, lentils, coconut milk, water and salt. Bring to the boil and simmer gently, covered, over low heat about 15 to 20 minutes until kohlrabi and lentils are fully tender. Stir frequently across the bottom. Cook longer and add a little water if needed; the lentils may partly break down and thicken the liquid.

  4. 4

    Finish and serve

Stir in lemon juice and pepper. Heat through again and serve hot in bowls. Keep the kohlrabi cubes visible; do not blend. This makes three light meals without additional sides.
