Blanched cabbage leaves can be folded without tearing, the rice is only pre-cooked and then swells up in the sauce together with the meat filling.
Why this recipe works
Golubtsy require some preparation time, but can be cooked very well in large quantities. Cabbage leaves should be soft enough to roll, but not to break up. Rice is only half-cooked in the filling, because it still absorbs liquid when braised. A simple tomato sauce keeps the roulades juicy; sour cream and fresh dill are only added at the table.
Recipe
Golubtsy are Russian cabbage roulades with a juicy filling of minced beef, pork, rice, onions and herbs in a mild tomato sauce.
Cook rice in plenty of water for 7 to 8 minutes, drain and rinse cold. It should be soft on the outside, but still firm in the core.
Cut out the stalk in a conical shape. Place the cabbage in a large pot of boiling salted water and carefully remove the outer leaves that are softening.
Cool twelve to fourteen large leaves and pat dry. Cut the thick middle rib base flat without cutting the leaf.
Heat half the oil. Sauté the onion and carrot for 6 minutes until soft, add the garlic and let the mixture cool completely.
Mix both types of minced meat with rice, half of the vegetables, dill, salt and pepper. Depending on the size of the leaves, place 70 to 90 g on top, fold in the sides and roll them up tightly.
Heat the remaining oil in a wide saucepan. Fry the remaining vegetables and tomato paste for 2 minutes, then stir in the tomatoes, stock, sugar and bay leaves.
Place the roulades with the seam facing down tightly into the sauce. Cover and cook over low heat for 55 to 65 minutes until the cabbage and rice are tender and the filling reaches at least 71 ° C.
Remove the bay leaves and season to taste. Garnish Golubtsy with sauce, a spoonful of sour cream and fresh dill.
