Recipe
Shchi is a Russian cabbage soup with white cabbage or sauerkraut, potatoes, carrots, onions, broth, bay leaf and dill. It tastes particularly round with sour cream and a little rest.
Prepare cabbage, potatoes, carrots and onion. Chop the sauerkraut roughly if necessary.
Sauté onion and carrots in butter or oil. Optionally, fry tomato paste briefly.
Add the stock, potatoes, cabbage and bay leaves. Simmer for 35 to 45 minutes until the cabbage is tender.
Season with salt and pepper. A small splash of vinegar can help with fresh cabbage.
Serve with sour cream and dill. Shtschi often tastes even better after a short rest period.
