Check the stalks
A small knife should easily pierce the thickest part. Browning alone does not show doneness.
The sprouts cook covered in a pan. Couscous soaks alongside, then both are mixed with nuts and lemon.
Why this recipe works
Halved sprouts cook evenly when the stalks are allowed to soften. Couscous needs only a short soak. This recipe makes two plant-based main servings.
Recipe
Tender Brussels sprouts meet fluffy couscous, crunchy hazelnuts, parsley and lemon.
Wash and trim the sprouts and halve them; quarter large ones. Finely chop the onion, roughly chop the hazelnuts and finely chop the parsley.
Heat the oil in a large pan. Fry sprouts and onion over medium heat for about 3 minutes. Add 80 ml water, 2 g salt and pepper. Cover and gently cook for about 10 to 12 minutes until the stalks are tender; add a little water and cook longer if needed.
Meanwhile bring the remaining 200 ml water and remaining 1 g salt to the boil. Remove from the heat, stir in the couscous and cover to soak for about 5 minutes following the packet. Fluff with a fork. Adjust water and soaking time if the packet differs.
Mix couscous with the cooked sprouts, all the pan juices, lemon juice, parsley and all the hazelnuts. Divide immediately between two plates. This makes two plant-based main servings without another side.
